    Traceability is at the heart of specialty coffee. It's not just a technical sheet. It's the complete story of the bean, precisely told from the farm to the cup. In the case of a microlot, this tracking must be even more rigorous because every detail influences its value, its character, and its exclusivity.

    Exact origin of the microlot

    Traceability begins at the source. The name of the farm or plot, the region, and the country of cultivation must be recorded. This precision allows for the identification of the origin of the sensory profile and guarantees the authenticity of the microlot.

    Crop altitude

    Altitude changes the plant's behavior and the development of the bean. Coffee grown at higher altitudes typically offers brighter acidity and more defined flavors. That's why this information is considered key.

    Coffee variety

    Each variety contributes distinct characteristics. Caturra, Bourbon, Pacamara, Geisha, or any other cultivar must be identified in the traceability system. This information helps the buyer understand the origin of the flavor notes in the cup.

    Processing method

    Washed, natural, honey, or controlled fermentations. Processing is one of the steps that most influences the final flavor. Recording the method used is essential to explaining the microbatch's identity.

    Harvest and collection date

    Knowing when coffee was harvested allows you to assess its freshness and plan its use accordingly. It also helps maintain strict control over the time from the farm to the roaster.

    Selection and quality control

    A specialty microlot requires meticulous selection. Ideally, the level of defects present in each sample should be recorded. For example, no more than five secondary defects and zero primary defects per 350 grams of green coffee.

    Tasting score

    Microlots typically undergo sensory evaluations by expert tasters. A recorded SCA score, usually above 86 points, validates their quality and specialty coffee status.

    Producer information

    Name, farming practices, and any information that contributes to transparency. Knowing who is behind the coffee creates a connection and recognizes the producer's work.

    Logistics data for the batch

    Bags, sub-lots, lots, and any reference that allows tracking the coffee throughout the entire supply chain. This ensures that the micro-lot is not mixed and retains its original identity.

    Agricultural practices and certifications

    If sustainable practices, fair trade certifications, or specific farming protocols exist, they should be included. Each of these factors adds value and builds consumer confidence.
